In this case, the task is easy, because these granola bars are super yummy and kid-approved.  When Dub took his first bite he proclaimed it “Ahh–mazing” and asked if he could have it as his lunchbox treat at school. No problem!

I love to slip little notes and jokes into his lunchbox daily to let him know I’m thinking of him, so I made a few super simple granola bar wraps to add a special touch to his treat. Of course, I couldn’t leave Evelyn out so I made a couple of girly-girl wraps as well.

With the official begin of summer quickly approaching, we’ve been having a lot of fun making homemade ice cream again. We’re huge fans of ice cream, and even made it the central theme for Eve’s birthday party one year! My very favorite homemade ice cream continues to be vanilla ice cream with a drop or two of lemon extract, but the kids have loved creating their own ice cream recipes.

Salted Caramel Dip and Apple Chips for a Sweet Healthy (ish) Treat

You’re going to love this salted caramel apple dip recipe! Use it on fruit, ice cream, dried apple and banana chips, or graham crackers for an extra sweet treat!

Just like most families, we try to eat a well-balanced diet. We incorporate lots of fruits and veggies into every meal and snacks. But I’ve been thinking a lot about how my kids have started to view fruits and vegetables almost like the drudgery they have to go through to get to the good stuff: sugary desserts. So, what about turning fruits into actual dessert? Something that’s not completely saturated in sugar and fat, but doesn’t leave them cheated out of a great treat.

I attempted this today for the kids’ after school snack.

First, I made an ahh-mazing salted caramel dip. I got the recipe from Kevin and Amanda, here. I’d never made caramel anything before and I wish I’d known how easy it is!

Just heat sugar, butter, and stir in heavy cream and sea salt.

Salted Caramel Apple Dip Ingredients | Five Marigolds Whatever you do, DO NOT bump the top of the whisk handle with your hand, sending about 1/8 Cup of nearly caramelized sugar all over your kitchen. Just don’t.

The result is sweet, salty caramel goodness that will have you licking the bowl, pan and anything else you might “accidentally” spill.

If you aren’t worried about extra big helpings of the caramel counter-acting the healthy fruit, serve it up as a dip for dried apple chips, graham crackers or fruit.

In this case, I only wanted to use a little, to make something healthy into a treat. So, I just poured a little of the cooled dip into a ziplock, snipped the corner with scissors, and drizzled just enough over some freeze-dried apples. The verdict? The kids loved them and were asking for more!

Healthy (ish) Breakfast Cookies

I have a serious sweet tooth in the morning, so I’ve long been on the hunt for sweet breakfast recipes that are healthy’ish AND taste good. It’s been a long journey! After a testing a  lot of recipes and coming up short, I’ve finally found something that balances a little of both – it’s super yummy, and the ingredients are in the healthy’ish zone that I can feel good about serving my kids. Rich flavor – with no flour, butter or refined sugar.Another thing I love about these cookies is that they are really satisfying. I’m almost always hungry within 30 minutes of breakfast, but not with these.  Ladies and Gentleman: I proudly introduce you to Banana Chocolate Chip Breakfast Cookies.

I’ll often mix up the dry ingredients before I go to bed, and in the morning just add the banana, nut butter and honey and pop them in the oven. So good! Here is the recipe with my preferred ingredients.

Ingredients:

  • 2 1/3 C. quick oats
  • 3/4 t. salt
  • 2 bananas, mashed
  • 1 C. nut butter (I prefer almond butter)
  • 1/4 C. honey
  • 1/3 C. mini semi-sweet chocolate chips

Directions:

  1. Preheat oven to 325 degrees.
  2. Mix all the ingredients together, folding in the chocolate chips at the end.
  3. Scoop 3 tablespoons per cookie onto a parchment-lined baking sheet  – I used my Pampered Chef large scoop to make easy work of this – and gently flatten to the desired shape.
  4. Bake for 15 minutes and let cool on a baking rack.

Makes around 15 cookies. These stay good for about three days, or can be frozen for later. Be sure to separate cookies with parchment paper in storage.

Apple Pie Bread

One of my favorite things to do on the weekend is make sweet breads that we can snack on all week long. While they’re not always the healthiest recipes, I like that they’re homemade and a less processed than anything we’d pick up at the store. I always cook sweet breads in an 8×8 square pan. I find that the bread cooks more evenly and we avoid the crispy heels that none of us are a fan of. We pack them in lunch bags for dessert or for an after school snack.

Our favorite is banana bread, but it’s safe to say this Apple Pie Bread is now going into the rotation!

Apple Pie Bread | Five Marigolds

I got the recipe from Pip and Ebby and made a few small modifications:

Ingredients:

BREAD

  • 1/2 cup unsalted butter (1 stick), softened
  • 1 cup brown sugar
  • 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon (you could also add 1/2 teaspoon nutmeg, but I left this out)
  • 3 large apples, peeled, sliced and cut into small chunks (about the size of diced onions), I used HoneyCrisp and Opal Apples, because that’s what I had on hand.

TOPPING

  • 2 tablespoons unsalted butter, melted
  • 1/2 cup flour
  • 1/2 cup brown sugar

Instructions:

  1. Preheat oven to 350 degrees F. Coat a 9×9-inch glass pan with olive oil spray and set aside.
  2. In a large bowl or stand mixer, combine the butter, brown sugar, milk, eggs and vanilla. Beat on medium speed until mixture is creamy. In a medium bowl, combine the flour, baking powder, salt and cinnamon. Gradually add the flour mixture to the large bowl and mix until fully incorporated. Fold in the apples and pour into the oiled pan.
  3. To make the topping, combine 2 tablespoons of melted butter with 1/2 cup each of flour and brown sugar. Mix with a fork until crumbly and sprinkle evenly over the top of the batter – I used only 1/2 of the mixture, just enough to cover the surface. Bake in the preheated oven for 55 minutes, checking for doneness starting at 45 minutes by inserting a toothpick into the center of the bread.
  4. Cut into 16 squares and serve warm. Want to really go for the “wow” factor?  Drizzle just a little ice cream caramel over the top. Oh. Yes. I. Did.

Caramel Apple Bar with Opal Apples

Looking for a fun and healthy(ish) after school treat? I love the idea of a caramel apple bar, where your little ones can help themselves to sampling healthy apples with some sweet toppings.

Caramel Apple Bar | Five MarigoldsJust set out a fun array of toppings – choose chopped nuts or pretzels, chocolate chips, peanut butter, or caramel or chocolate sauce.. Then set out a variety of  sliced apples to choose from. I always love to get Honey Crisp when they’re in season, and this time I tried Opal apples.

I picked up some Opals because I received a coupon from BzzAgent to try some for free in exchange for sharing my opinion. While they’re not available in every grocery store, you can spot them easily at participating grocers by their bright yellow color. Something that makes Opals unique is their  non-GMO no-browning claim. While I’ve found them to eventually succomb to browning in my experience, they are non-browning enough to pass the school lunch test – in that they still look good enough for my finicky 6-year old to eat hours after I’ve sliced them for lunchbox prep! I also like that they are sweet, but not too sour – which makes Opals a winning apple in our home.

As a marketer by profession myself, I love a company with a good cause marketing campaign, and Opals are a brand with heart – a portion of Opal Apples’ sales goes to their Youth Make a Difference grants, which support youth-led non-profits involving food, nutrition and agriculture.
